Down the rabbit hole we go!
When you’re in lockdown for long enough you start to run out of interest in the foods you usually eat. This recently happened to me and I found myself craving something a little different. Trying not to go all-out, I simply adopted a vegan/vegetarian approach and made something that just didn’t have meat with it.
Find things to substitute meat/poultry can be tricky, especially if you’re not a veteran or food-already-available-at-home ready… So, I’m basically having whatever vegetables there are in the cupboards and fridge.
Coleslaw + Greek salad with gherkins + baked potatoes, butternut & sweet potato = achievement. Don’t judge. This is just the beginning.
